A popular Chinese mala tang chain where you pick ingredients for a customisable, numbingly spicy broth bowl.
Zhang Liang Mala Tang is one of China's most recognised mala tang brands, operating on a pick-and-weigh model where diners select from a wide spread of raw ingredients — meats, leafy greens, tofu, mushrooms, and noodles — which are then cooked in a rich, peppercorn-infused broth that delivers the signature numbing-heat sensation.
The West Mall outlet brings this interactive, build-your-own-bowl experience to Singapore's west, with customisable spice levels that cater to both cautious newcomers and heat-seeking veterans.
The broth is simmered for depth, and the ingredient quality stays consistent across visits. For a warming, customisable mala tang bowl that hits all the right spice notes, Zhang Liang delivers a satisfying punch.

I think it’s average. I chose the signature mala soup but I didn’t think it’s a typical Mala or what I expected it to be. Other reviews said very nice but to me just ok ok, more like a watery laksa. I suppose maybe the dry mama would be better? It’s really oily though. When the soup cools down the fat cakes up like harden butter. I wonder how many calories this is,… not for frequent dining for health reasons.

Newly opened Zhang Liang Mala. Very crowded and the queue starts to be long since 6pm. So come early if you don’t want to queue. Queue wait time is about 15-20 mins. Then you have to wait to get the ingredients and queue to pay, about 15 mins as well. Waiting time is very long due to the popularity. Taste wise, your typical mala tang. Advice to all, consider visiting other outlets if you don’t want to wait. The reason for their high reviews is because counter ask them to give 5 stars for discount. But ok. 5 star is ok here, just long wait time.

I have been a loyal customer to Zhang Liang for over five years since its establishment in Singapore. As a student, I visited the place after long study sessions, finding all my stress gone with the savoury tomato soup. Now, I continued to have meals there, surprised by each and every new innovation. The service crew is really kind and patient, recommending the dish type based on my taste preference. 来张亮吃,有种回家的感觉!

Had lunch here and it was so yummy! You get to pick your own ingredients and they charge by weight. I tried the sesame one and loved it. The staff were super nice too; we accidentally spilled something and they were so patient and helped us clean up. They also have vegetarian options, which is great!

Full transparency, we were going to give a 3 star review because we had the dry mala and it was SALTY. This coming from someone who loves salt. While typing that review, the staff came up to ask us what happened so we told them. They replaced our mala immediately and it tasted so much better. So we are back to 5 stars for Zhang Liang 🩷 also cause the previous time we were there the food tasted good. And with a PSA to see something 👀 say something 👄 don't be like us and eat the salty mala in silence.
