Popular Chinese mala tang chain where you pick your own ingredients for a fiery, numbing broth.
Zhang Liang Mala Tang is a prominent Chinese mala tang chain that has expanded internationally, bringing the addictive, numbing-spicy soup tradition to Singapore. The format is simple and interactive: diners select their own ingredients from a spread of fresh vegetables, tofu, mushrooms, meatballs, seafood, and noodles, placing them in a bowl that is then cooked to order in a rich, spiced broth.
The mala flavour profile — "ma" for numbing Sichuan peppercorns and "la" for fiery chilli — delivers a distinctive tingle and heat that keeps enthusiasts coming back for more. The broth itself is the backbone, simmered from bones and aromatics with layers of chilli oil, Sichuan peppercorn, and herbs that build complexity with every spoonful.
Diners can adjust spice levels and choose between the original mala broth or a milder, non-spicy option. The self-service format means the meal is as varied or as simple as you wish, and pricing is typically by weight, giving you full control over the final cost. For fans of bold, fiery Chinese flavours, Zhang Liang Mala Tang offers a customisable, satisfying bowl that hits every note. It is a warming, interactive meal that feels both personal and indulgent — perfect for anyone who believes that spice is a way of life.

The food was comparable to other outlets, and I appreciated being able to request less mala and sodium—it suited my taste well. However, one issue I encountered was with the pork belly I picked up—the skin was quite tough and difficult to chew. Portion of rice is quite small IMO. Taste and service is subjective and personal.

Placed my bag down to go and take the ingredients for take away and the staff decided to give that seat to a person who wanted to change seat. I thought it was first come first serve? I was already unhappy by that and they did not even separate the ingredients from the soup for takeaway. why other branches do it but they don’t. super unhappy with this type of service.

Finally tried this and I love it! I like that they have a condiment corner where you can add whatever you like to your food. They even have chili oil if you want it spicier. Ingredients were quite fresh, and the service was good during my visit. Will be back again :)

Tried 张亮麻辣烫 @ West Mall for lunch and found it to be an above-average experience. We had both the Tomato Soup base and Mala Hotpot (Level 2 spiciness), with assorted ingredients and instant noodles. The ingredients were relatively fresh, and the soup bases were decent, though nothing particularly outstanding. What sets this place apart is the wide variety of condiments—chili oil, peppercorn oil, sesame oil, soy sauce, coriander, and more—which allow you to customise the flavour of your hotpot to your liking. It’s a thoughtful touch that enhances the experience. Service was prompt and efficient, and the staff were friendly and helpful, especially for first-time customers like us. The only downside is the small table size—each table seats a maximum of four, so our group of five had to split up. That said, we were seated side-by-side and it wasn’t much of an issue. Overall, a solid spot for a quick and satisfying mala hotpot fix. Would return again!

I have been a loyal customer to Zhang Liang for over five years since its establishment in Singapore. As a student, I visited the place after long study sessions, finding all my stress gone with the savoury tomato soup. Now, I continued to have meals there, surprised by each and every new innovation. The service crew is really kind and patient, recommending the dish type based on my taste preference. 来张亮吃,有种回家的感觉!
